White Chocolate Macadamia Nut Cookies

I've been searching around for this recipe! Not too sure why there are not many recipe books actually covering this recipe...

White Chocolate & Macadamia Nuts?! I can't think of a better combo! Though, there's also Triple Chocolate Cookies, Peanut Butter Chocolate Chip Cookies, Totally Chocolate Chocolate Chip Cookies.. *guilty*

Anyways, White Chocolate & Macadamia Nut Cookies are one of my favourite cookies to eat! It's chewy, and has the right amount of sweetness to it. Hmm..though it's usually sweeter than Chocolate Chip cookies. Who doesn't like to treat themselves once a while? Yum!

So here you are, with this yummylicious cookie recipe! 

Adapted from "For the Love of Cooking"
{Makes about 2-3 dozens depending on size}
All you need are:

2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup butter, melted
1 cup packed brown sugar
1/2 cup white sugar
1 egg
1 egg yolk
1 tablespoon vanilla extract
1 1/2 cups chopped macadamia nuts
1 1/2 to 2 cups white chocolate chips

All you need to do:

1. Preheat the oven to 325 degrees. 
2. Combine the flour, baking soda and salt in a small bowl then set aside. 
3. Beat together the melted butter, brown sugar, white sugar, egg, egg yolk and vanilla with a mixer until creamy. 
4. Gradually add the flour mixture to the sugar mixture until just mixed. 
5. Stir in the macadamia nuts and white chocolate chips by hand. 
6. Use a mini mechanical ice-cream scoop to drop cookies onto the lined baking sheet.
7. Bake for 12-15 minutes or until the edges look golden brown. The back of the cookie will feel soft to touch.
8. Cool on the baking sheet for at least 4-5 minutes so the cookies can set before moving to a rack.

What are your plans for the weekend? Looks like it's going to be a cool weekend.. 

Sorry I've not been blogging much..remember I was telling you about my sprained neck about 2 weeks ago or so...yea, it's a joint injury :( which means, I can't do my exercises ~ Zumba. 

Nonetheless, it is getting better now...hooraaay! So hopefully I'll be able to get back into my exercise regime soon!

Anyways, this is what's been happening in my life!
