Happie Happie Easter!!!

I'm sure you'll be eating lots of CHOCOLATES and HOT CROSS BUNS!

And if you have extra Hot Cross Buns, I have a great idea on how you can turn it into something YUMMIER! And also using those excess Chocolates, if there's any left, just add it to this recipe!

This is my favourite Bread Pudding recipe! It has a nice crust and it's so moist inside with all the goodiness!

So quickly, make this with those buns and chocolates this Easter! 


All you need are:
3 eggs
2 cups milk
1/2 cup sugar
1 tsp vanilla extract
2 bananas (optional)
4-6 hot cross buns
50g butter, softened

1 - Pre-heat oven to 175 degrees.
2 - Butter hot cross buns and tear big chunks of it and just scatter it randomly in your dish. 
3 - Slice bananas and scatter it randomly in between the hot cross buns pieces.
4 - Warm milk and sugar until all sugar is dissolved.
5 - Whisk eggs in a bowl.
6 - Slowly pour the warm milk mixture into the eggs, whisk continuously so that the warm milk doesn't cook the egg mixture.
7 - Add vanilla extract into egg mixture, stir.
8 - Pour egg mixture into your buns and banana dish.
(if you like some crispy bits, do not soak all the buns)
9 - Bake for 30-40 minutes. It will be done when you cut into your pudding, it holds its shape.
10 - When done, sprinkle (2 tsp sugar mixed with 1 tsp cinnamon) over your pudding. Let it cool down a little before serving.
 
 You can make so many different variation with recipe too.

Royal Easter Show 2010, Sydney

So the Royal Easter Show is here from April 1st to 14th!

It is pretty much a place to enjoy yourselves and have fun during the Easter month. It's like a  fun-fair with food and SHOWBAGS!!

There's an entry fee of $33 for adults and $22 for children. It isn't cheap because even with an entry ticket, that doesn't get you any rides, food or showbags with it. Those are to be paid/bought separately.

Anyway, I'll just let the pictures do the talking.

Here are some of the games at the show! Most games starts from $5 for a single play.

The guy in the picture asked for his photo to be taken! hehe

There's also the Barn Farm, where you get to pet/touch, see even feed the animals.
 As you can see, they are HUGE!

I never knew pigs were huge too!


The donkey is so cute :)

We also got to watch little duckling hatch from the eggs..Amazing!

 
 There was also dogs for show too...awww I miss having one. We got to pet them too :)

Now now, the food.

  Overall, it was good weather and thankfully it didn't rain, even though it was forecast to rain.
My brother and I definitely enjoyed ourselves. :)

Happy Easter with Chocolate Chip & Raisins Hot Cross Buns.

Wishing everyone Happy Easter and as well as Happy April Fool's day :)

I've made some Chocolate Chip & Raisins Hot Cross Buns :)

Try them, it is easy.

Let's celebrate Happy Easter with some Hot Cross Buns!!

Recipe (adapted from WatchMojo)

Buns:
4 cups All Purpose Flour
1/3 Cup of Sugar
1 satchet / 0.25 Oz Active Dry Yeast
1 1/4 tsp Ground Cinnamon
1/2 tsp Salt
1 Cup Fat Free Milk
1/4 Cup Butter
2 Eggs
1/2 Cup Raisins
1/2 Cup Chocolate Chips

1. Combine 2 cups of flour, sugar, salt, yeast and cinnamon in a mixing bowl.
2. Heat the butter and milk in a saucepan on gentle heat, Stir, when the butter is completely melted, it is ready to be removed from the heat.
3. Combine milk into dry ingredients, beat until just moisten.
4. Beat the 2 eggs, until smooth.
5. Add the raisins and chocolate chip, stir to mix and the remaining flour to form a soft dough.
6. Turn over the soft dough on a lightly floured surface, knead until it is smooth and elastic. (Should take 6-8 mins) or you can use the dough hook at speed 2 until smooth and elastic.
7. Spray a bowl of non-cooking spray, put your dough in the bowl and turn the other side, so that both sides gets coated.
8. Cover with a damp cloth and leave to rise till double in size. (Should take 1 - 1 1/2 hours)
9. Cut into 16 small balls. Roll and place it in a greased baking tin. Use a knife to cut a "cross" on each dough.
10. Cover with cloth and let it rise until double in size again. (Should take 30-45 mins)
11. Once risen, beat an egg yolk and 2 tbsp of cold water. Brush the top of the buns with the mixture. 
12. Bake in 190C for 15-22 mins or until golden brown.
13. Place on wire racks to cool.

Crosses:
1 1/2 cup Icing Sugar
2 tsp lemon juice
1. Sift icing sugar and beat them together.
2. Pipe "crosses" on top of the cool buns.

Officially Autumn!

So it has been a while since I last posted an entry.

I've been pretty busy running around. Therefore, I apologise for not keeping here updated.

So how have your week been? Busy? March is almost gone..

Easter is around the corner!

So have you all been practising your Hot Cross Buns and Easter Eggs skills?

I've made Hot Cross Buns twice already, still trying to find a good fluffy recipe.

As I'm not a fan of just raisins buns, I've added Chocolate chips too :)

Both times with different recipes.

By any chance anyone know any fluffy & moist ones? The first I tried with lemon icing on top as crosses :) and the 2nd one was with all purpose flour, I find the flour version comes out too hard after baking, I ended up just removing the crosses when I'm having one.

Also the easter show is gonna be here sometime early April.

I'm excited :)

Anyway, have a good weekend, weather has been pretty warm  lately.
